CHicken tonight




Chicken pasta bake with sauteed mushrooms.

I used mushroom soup for the sauce with garlic and onions(chopped and fried first) leeks, celery,green peppers and thyme.
Put the pasta on a baking tray.Pour the sauce over the pasta and cover generously with cheese.
Sautee' the mushrooms separately and sprinkle on top of the bake.
Shove it in the oven gas mark 6 for 40 minutes.

Snack time


Ermm, i'm so hungry rite now that i could eat a horse.I just treated myself with chilli scrambled eggs. I guess this is one of the simple things in life that you should do before you die.Make yourself this simple dish.Scrambled eggs with lots and lots of chilli sauce.

Eating alone



The stuff you eat when your cramming a semester's worth of notes in one night. Freedom in a mere six hours. We ran out of rice, so selfishly cooking for myself tonight, sweet jacket potatoes with MELTED CHEESE and shrimp sambal and Roast peppers stuffed with bulgar wheat,cheese,and chopped tomatoes.. Good combination, quick and perfect for l ast minute revision.

Menyayur


Menyayur-a term invented meaning to cook vegetables. hehe

I havent featured any vegetables in this blog so here goes.

Stir fried carrots and green beans.Drizzled generously with sweet soy sauce. Sprinkled with aromatic fried shallots. A portion of your five a day. Suitable for vegetarians.(if you omit the dried shrimps).

Mango chicken




Thai style mango chicken.
what you need:
2 mangoes sliced thinly
a red onion
2 table spoons of chopped coriander
2 tablespoons of Thai fish sauce
a handful of chopped peanuts
1 Tbsp Lime juice
2 chilis
2 chicken breasts chopped into bite sized pieces
2 eggs
cornflour
seasoning

First season the corn flour with salt and pepper.
Beat 2 eggs, dip the chicken pieces in it and coat with the flour.
Fry them up for at least 5 minutes and set aside.

Put the mangoes,cut onion,fish sauce,lime juice ,sliced chillies,chopped coriander in a bowl and mix well.
Toss the chicken in the bowl and done!
Hows that for a quick dinner!
Crispy meaty chicken,the crunch of peanuts,infused with the fragrance of pungent coriander, the heat of the chillies,and the tangy sweet and sour mangoes. A treat for the taste buds.nyum nyum yummy.

A happy 3 course meal








1.Corn Soup with shredded chicken.
2.King prawns in chilli sauce, stir fried chinese vegetables,rice
3.Banoffee pie

Credits to M for her first time cooking prawns. A for taste, but marks must be deducted for leaving the stove unattended.hehe

How to cook corn soup?
Fry one chopped onion and a clove of garlic.
Pour in a can or two cream of corn.
Chicken stock,salt and pepper.
Beat 2 eggs and pour into the soup and stir quickly.
Thicken with a table spoon of corn flour mixed with a bit of water.
Sprinkle chopped chili and shredded boiled chicken breast.
Done.Warming food,sweet and spicy.

Mains
Supervised by me,done nervously by M.But it turned out beautiful.
Simple yet delicious.
Chop a large red onion,3 cloves of garlic and fry until fragrant.
pour a whole bottle of maggi chilli sauce and 5 tablespoons of ketchup.
Season with salt and pepper and simmer for 5 minutes.
Put in chopped chillies(the magic kick in the dish), and sliced tomatoes.
Lastly put in the prawn and cook for just five minutes.
Scrumptious, luscious,thick juicy prawns.
A for taste but marks had to be deducted for leaving the stove unattended Ka.hehe.

Banoffee pie.
My first dessert i learned to make.
250g of melted unsalted butter mixed with 400g crushed digestive biscuits.
Level the mixture in a greased baking tray.Bake in the oven for 20 minutes, Gas Mark 4.
Take it out of the oven.
Pour in the toffee(made by boiling 2 cans of condensed milk for 2 hours.Well worth the wait).
Mix with 4 bananas chopped into discs and sprinkled with lemon juice.
Sprinkled chopped hazelnuts.
Pour a generous amount of whipped cream on top of it, with grated dark chocolate.
Heavenly.Rich.Creamy.Chocolatey.Soft.Crunchy.Buttery.Toffeey.All at the same time.Marvello.

Strawberry mint ribs.




Ribs marinated in garlic,mint sauce and strawberry jam, sprinkled with rosemary and olive oil.

Marinate lamb ribs for at least an hour with chopped garlic, 2 tablespoons of mint sauce, 2 tablespoons of strawberry jam, and seasoned with black pepper and salt.
Place lamb ribs on a tray, sprinkle with rosemary, drizzle with olive oil. Gas mark 7 half hour to forty minutes. Finger lickiing,Bone-biting good!

Ayam kicap. The timeless malay classic


I cooked scallops for starters,Zn cooked ayam kicap for dinner.Personally, my most favourite malay dish.Chicken braised in sweet dark soy sauce, infused with spices and a dash of curry. A taste of Brunei every bite. Thanks Zn

Scallops from the South China Sea




I bought these scallops last week as it was on sale.The first thing that pops into my head when i was going to cook it was scallops in garlic butter. But nahh, Y told me that i've been cooking western for days now.So i did an oriental twist; Garlic and ginger scallops stir fried in oyster sauce, with red peppers rested on a bed of egg floss.Looks fancy but quite simple.

To make the egg floss, heat oil in a frying pan or wok of at least 2 cm deep. Beat 2 eggs and pour them over a strainer which goes over the hot frying pan.Quickly shake the strainer in circular motion until floss forms and browns. Ive tried this a few times without succeeding.But this time it looks quite good.

Next stir fry garlic and ginger until fragrant. Then toss in the scallops and fry for 5 minutes.Add in 2 tablespoons of oyster sauce, sliced red peppers, and a dash of black pepper.Done. Luscious,soft delicate, prawn like flavour. luxurious.

My mind cant function at night,its a time for dinner and digesting.Dinner for tonight,Roast chicken stuffed with seasoned lamb mince and mixed herbs. Vegetables; carrots,celery and capsicum stewed in lamb mince.

Baked Basa fillet in peri-peri sauce




Exams are in 10 days time. After 2 hours of revision today i had to take a break and baked a basa fillet.Basa is a fresh water white fish from tropical waters, with a succulent texture and mild aroma.Easy and simple yet delicious. Just marinate the fish in hot peri-peri sauce,lemon juice and seasoning, cover it in a parcel of foil and bang it in the oven for 20-25 minutes (gas mark 6).
